Tasty Tuesday
So a couple of weeks ago at around 2:30am (yay for insomnia) I decided I wanted to bake...so I pulled out this yummy recipes. Not only is it absolutely delicious, but it's really healthy! I hope you guys enjoy!
Raspberry Streusel Muffins
Ingredients:
Muffins:
1 1/2 cups all-purpose flour
1/4 cup sugar
1/4 cup packed brown sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
1 egg; lightly beaten
1/2 cup + 2 Tbsp fat-free milk
2 Tbsp melted butter
1 1/4 cup raspberries
1 tsp grated lemon peel
Topping:
1/4 cups chopped pecans
1/4 cup packed brown sugar
2 Tbsp. all-purpose flour
1 tsp. ground cinnamon
1 tsp. grated lemon peel
1 Tbsp. melted butter
Glaze:
1/4 powdered sugar
1 1/2 tsp. lemon juice
1. Preheat the oven to 350 degrees.
2. In large bowl combine first 6 ingredients (flour, sugar, brown sugar, baking powder, cinnamon, and salt)
3. In another bowl, combine egg, milk, and melted butter.
4. Stir wet mix into dry mix until just moistened.
5. Fold in raspberries and lemon peel.
6. Fill batter 3/4 full in muffin cups.
7. Combine topping ingredients; sprinkle 1 Tbsp. over each muffin cup.
8. Bake 18-22 minutes.
9. Combine glaze ingredients; drizzle over warm muffins.

133 mg sodium
31 g carbs

Easton's Excursions - Week 14
Week 14
This week you:
- have REALLY found your voice. You are reacting to people when they talk to you by "oohing and ahhing" back.
- have realized that if you are in your crib and "talk" REALLY loud, Mommy will come and get you. Mommy knows you're not crying because she comes into your room and you have the biggest gummy grin on your face.
- have started to go on daily walks with Mommy and Daddy and you all love them.
- attempted to eat rice cereal off of a spoon...you weren't a fan...at all.
- rotate regularly from your swing, to your bumbo, to you walker, to your play mat and are perfectly content like that.
- are already about to outgrow your 3 month clothes.
- weigh 14.12 pounds, are 25 inches long and your head is 42 cm around. You're in the top 1/3 percentile in all 3 categories!

Tasty Tuesday

Welcome back for Tasty Tuesday!
This week I'm going to introduce you guys to the yummiest potatoes EVER!
Roasted Red Potatoes
Here's what you'll need:
2 pounds red potatoes, quartered
2 Tbsp olive oil
2 Tbsp butter
1 tsp. House Seasoning (I made a big batch of this, which is 1 cup salt, 1/4 cup pepper, & 1/4 cup garlic powder. I use this seasoning for just about everything I cook).
Shredded cheese (I think I ended up using about 1/2 a bag)
1. Wash and quarter the red potatoes.
2. Place potatoes in shallow pan. (I used a small dish, I would suggest using a regtangular one instead so the potatoes cook all the way through).
3. Coat with olive oil and place pats of butter in pan.
4. Mix and add House Seasoning.
5. Sprinkle cheese on top.
6.Bake covered at 350 for 30 minutes.
7. Uncover and bake for 20 minutes.
8. Serve and enjoy!

Easton's Excursions - 3 Months
3 Months Old
Alrighty, so it's been a LONG time since I've done my daily blogs, but I'm getting back on the horse!
At 3 Months old you are...
- sleeping in your own crib every night
- have a nightly routine of bathtime, lotion, jammies, bottle, book, rocking chair, and crib
- you're eating 6 ounces of formula and rice every 4 hours (Mommy is about to bump you up to 6 1/2)
- you're smiling a LOT and it make Mommy and Daddy fall even more in love with you every time we see that gummy grin
- you're a morning baby
- you wear 3 month sized clothes
- you weigh 13 pounds 13 ounces, are 25 inches long, and your head is 42 cm around (yes, you have a big dome)
- you LOVE...Nigel (your racoon blanket), your binky, sitting up in your Bumbo, your walker, and the car
- you are officially a "supported sitter"
- you are teething...yep, super early
- you bear weight on your legs
- you love being outside
- you sleep AT LEAST 9 hours every night
- you steal Mommy and Daddy's heart away a little more every day

Bad Mom?
Ever feel like a bad Mom? I have...I do.
Let me catch you up a little. I've always had very mild versions of anxiety attacks. Not enough to affect my everyday life. If I ever felt anxious at all, all it would take was leaving the room for a couple of minutes and taking a few long, deep breaths.
After Easton was born, my anxiety got worse, a lot worse. And with it came ridiculous insomnia. Now it is to the point where it is affecting my everyday life, bad.
Because of our 2-month trip away from home, I ended up not getting my 6-week check up until also 3 months post-partum. Last week I discussed my insomnia and extreme anxiety with my doctor and he decided that it would be best to test my thyroid.
So they sucked my blood and off I went.
2 days (and 2 calls to the doctors office) later, I got my test results back...my thyroid was fine...good news, however this meant that I was having actually full-on anxiety attacks...bad news, and I would need to see a Psychologist to be treated...even worse news.
I was a Psych major in college. I know the questions they're going to ask. I know that they're going to make sure that I'm not a risk to myself or my child, which I'm not.
I KNOW that it's anxiety and that I need to be treated for it, and up until tonight I was still hesitant about going to see a Psychologist for help. Up until I started having an anxiety attack while giving Easton his last bottle of the night.
I felt it coming while I was giving Easton a bath, but I tried to shrug it off because there was absolutely no reason for me to be having one. I wasn't stressed or anxious about giving him a bath. I do it every single night. It's our special time together. It's our routine.
The anxious feeling gradually got worse and worse while I was putting his lotion and jammies on, and by the time I was giving him his bottle it was full force.
This is when I thought to myself, "Stevie, you HAVE to get this fixed because you can't continue to live like this."
For a split second, I resented my son. I resented him and I resented my husband.
They didn't do anything wrong...at all.
At this point, I began to sob quietly in the hopes that Chris wouldn't hear me.
Easton finished his bottle, so I rocked him to sleep and laid him down in his crib for the night.
Now I sit here asking myself over and over again in my head..."Am I a bad Mom?"

I'm BACK...
AND I MISSED YOU!!!
I am SO sorry that I've been MIA for the past 3 weeks. As most of you know, Chris, Easton and I have been gone from our home since the beginning of February. Chris had training in Wichita Falls, TX for 5 weeks for his job and that just so happened to only be 45 minutes away to where most of my family lives in Oklahoma! So when Easton was a mere 2 1/2 weeks old, we loaded up my little car and made the cross-country trip.
After we spent the 5 weeks there, we headed up to Missouri to stay with my Dad for a couple of days and then off to Iowa for 2 1/2 weeks.
Our trip in Iowa was absolutely amazing! My amazing mother-in-law threw a wedding reception/welcome baby shower for Chris, Easton and I which meant more to me than she will ever fully understand. Chris and I got married at the courthouse and because of family issues we weren't able to have an actual wedding. I also did not get any wedding or baby showers, so this was amazing that she did that for us. We had a TON of fun and I got to design everything! :-)
On Wednesday we headed back home to North Carolina, and let me tell you...after over 2 month away from your house and living out of suitcases...HOME.IS.FREAKING.AMAZING!!!
So let me catch you up a little on my family and myself...
Chris:
Chris will start back to work on Monday and as much as he's enjoyed I think he's enjoyed his time off (haha) I'm pretty sure he's ready to get back into the swing of things.
Softball season is officially here! For those of you who don't know...Chris and I are HUGE sports fans and he plays on both his squadron and base softball teams. Squadron doesn't travel which means weather permitting, Easton and I will be able to make it to every game. However the base teams does nothing BUT travel, which is fine with me. We discussed it, and I don't want to be one of those ridiculous over-bearing housewives that "doesn't allow" her husband to have a life. We'll be able to go to most of the games, just not the ones in 150 degree weather (which I'm okay with missing out on).
Easton:
Easton will be 3 months old in 9 DAYS!!!! Seriously...I can't believe he's already that old!
We weighed him ourselves last week and he's up to a whopping 14 POUNDS!!!!! Needless to say, we have a little chunky monkey on our hands.
He is IN LOVE with his Bumbo!
He doesn't like to be held facing the person who is holding him. He has to be able to look out and see what's going on.
He's SO close to giggling! I'm convinced that he really knows how, but he's just making us suffer.
Tonight is night #3 of him being on a routine and sleeping in his crib! YAY!

I have started my class to become a certified wedding planner! PS...I LOVE IT!
I have also started making hair accessories. I have a shop on Etsy called Sassy's Accessories. Head on over and check it out! If you see something you like, but would like it in a different color, just send me an email and I'm sure we'll be able to work something out! :o)
I've fallen off the weight-loss bandwagon, but I'm starting back on Monday.
I chopped of my hair...again. I FINALLY got what I wanted, after almost 4 months and 3 hair dressers!
I made the headband I'm wearing in this picture! It's available for sale at Sassy's Accessories!
I've become mildly obsessed with coupon clipping!
