Chocolate Oatmeal No-Bake Cookies
These are a BIG hit at our house. I've been making them for a long time and thankfully this is one thing that my husband is in love with (he's a very picky eater).
Here's what you'll need:
1/2 cup of butter
2 cups of sugar
1/2 cup of milk
4 tablespoons of cocoa powder (I use Hersey's)
1/2 cup of peanut butter (You can use creamy or crunchy. I use creamy because Chris doesn't like actual peanuts...he's so weird)
3 cups of quick-drying oats (like Quaker Oats)
2 teaspoons of vanilla
Bring the butter, sugar, milk and cocoa powder to a boil and let it boil for 1 minute.
Once it has boiled for a minute take the pan off of the heat and add the peanut butter and vanilla.
Stir until the mixture is creamy.
Add the oats and mix well.
Cover the counter with wax paper (although aluminum foil works as well...even the countertop...just more cleanup).
Take a spoonfull of the mixture and place on the wax paper.
Let the cookies set and enjoy!
