Tasty Tuesday


So a couple of weeks ago at around 2:30am (yay for insomnia) I decided I wanted to bake...so I pulled out this yummy recipes. Not only is it absolutely delicious, but it's really healthy! I hope you guys enjoy!

Raspberry Streusel Muffins

Ingredients:

Muffins:
1 1/2 cups all-purpose flour
1/4 cup sugar
1/4 cup packed brown sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
1 egg; lightly beaten
1/2 cup + 2 Tbsp fat-free milk
2 Tbsp melted butter
1 1/4 cup raspberries
1 tsp grated lemon peel

Topping:
1/4 cups chopped pecans
1/4 cup packed brown sugar
2 Tbsp. all-purpose flour
1 tsp. ground cinnamon
1 tsp. grated lemon peel
1 Tbsp. melted butter

Glaze:
1/4 powdered sugar
1 1/2 tsp. lemon juice

1. Preheat the oven to 350 degrees.
2. In large bowl combine first 6 ingredients (flour, sugar, brown sugar, baking powder, cinnamon, and salt)
3. In another bowl, combine egg, milk, and melted butter.
4. Stir wet mix into dry mix until just moistened.
5. Fold in raspberries and lemon peel.
6. Fill batter 3/4 full in muffin cups.
7. Combine topping ingredients; sprinkle 1 Tbsp. over each muffin cup.
8. Bake 18-22 minutes.
9. Combine glaze ingredients; drizzle over warm muffins.
